APC Document 63:                          Add new course, CHEM 109, The Food of Chemistry

 

Effective Date: Fall 2011



1.  Add:                 On page 93, new course, CHEM 109:

                                               

                        109         The Food of Chemistry (4)

A lecture and laboratory course that incorporates chemistry content and experimentation with food and food-related issues. Topics covered include molecular structure and bonding, intermolecular interactions, energy, molecular reactions and stoichiometry. Students will utilize the scientific method to evaluate the physical and chemical properties and changes involved in food and cooking and how these properties and changes are dictated by molecular structure.  Students do not need a strong math background to enroll. Fall.

 

 

Impact: 

There will be no impact on the staffing and resources in the Department of Chemistry.  This course was taught as CHEM 174 course in Fall 2010 (enrollment 22), Fall 2008 (enrollment 19) and Fall 2007 (enrollment 16).  It was not offered in Fall 2009 as the faculty member who regularly teaches the course was on family leave. 

 

Rationale: 

This course was developed by Dr. Sally Wasileski for the ILS Topical Cluster 9, “Food For Thought”.  It can also be used to fulfill the Laboratory Natural Science requirement.  The course has seen enrollment growth and is anticipated to be an important contribution to non-majors by the chemistry department.
